Lebanese Flat Breads are very versatile in use and suitable for different occasions. 
Different uses:

  • Cold as filled wrap
  • Hot as a filled wrap, grilled in a contact-grill
  • Chips & dips, baked. You can tear it up and use it as something to spread cheese or hummus on.
  • Crumbled: Bake flatbreads unadorned and crumble them through salads in the fashion of the classic Lebanese fattoush of mixed vegetables.

What is baba ghanoush?
Mashed cooked eggplant, olive oil, lemon juice, various seasonings, and sometimes tahini. The eggplant is traditionally baked or broiled over an open flame before peeling, so that the pulp is soft and has a smoky taste.

What is labneh?
a Middle Eastern food made by removing most of the liquid from yogurt (= a slightly sour, thick liquid made from milk with bacteria added to it) to make a type of soft cheese.
Tangy, thick, and creamy, labneh is basically yogurt cheese. Just like Greek yogurt, it is made by straining yogurt until it loses most of its liquid. If you think of Greek yogurt as strained yogurt, labneh is extra strained yogurt.

What is tahini?
Sesame seed paste, a Middle Eastern condiment made from toasted ground hulled sesame. It is served by itself (as a dip) or as a major ingredient in hummus, baba ghanoush, and halva.

INGREDIENTS

  • 5001980 LEBANESE FLAT BREAD WHOLEMEAL
  • ¼ of an apple (with a squeeze of lemon to stop it going brown)
  • Labneh (soft goat cheese or manouri or feta)
  • Baby spinach leaves (handful)
  • Baba ghanoush, ready made
  • Rocket
  • Tahini paste

METHOD

  1. Wash spinach leaves and put in a shallow microwave dish. Cover and cook on high/100% for 1-2 minutes or until spinach leaves just wilt.
  2. Compose the Lebanese wrap starting with spreading the baba ghanoush.
  3. Continue by topping with the wilted spinach leaves, a couple of spoons labneh, apple cubes, and tahini paste.
  4. Cover with the rocket and roll up.
