THE STORY BEHIND

Laugen bun or lye roll is a traditional German, Austian and Swiss bakery specialty. The taste is typical for the Laugengeback family known as the pretzel. The bun has been immersed in a high pH solution - LYE -  before baking. The maillard reaction during baking gives this bun  its typical dark brown colour and distinctive flavour. 

TIPS & TRICKS 

  • Toast or grill cut side for more taste, texture and protection against crumb humidity. 
  • Its distinctive taste lends itself wonderfully to making juicy  hamburgers with for example: wild boar.
